Beverly’s Egg Salad Recipe

Ingredients

  • 8 eggs, hard-boiled and peeled, coarsely chopped
  • 1/2 stalk celery, finely chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons chives, finely sliced
  • 2 teaspoons fresh lemon juice
  • 2 teaspoons whole-grain mustard
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • paprika, optional, to taste, for serving
  • crackers, optional, to taste, for serving

Directions

Step 1 –In a medium bowl, add the eggs and slightly mash them with a fork to break up the yolks.
Step 2 –Add the celery, the mayonnaise, the chives, the lemon juice, and the mustard and mix until combined.
Step 3 –Season the egg salad with the salt and the pepper.
Step 4 –Transfer the egg salad to a serving bowl and sprinkle it with the paprika.
Step 5 –Serve with the crackers.
